Roasted Broccoli

One of our favorite vegetables is broccoli.  We love it raw, steamed, smothered in cheese, mixed into casseroles and soups, and tossed in salads, but we especially enjoy it roasted.

 

4 cups fresh broccoli florets, from 2 small heads

2 Tbsp olive oil

1 tsp kosher salt

1/2 tsp freshly ground black pepper

1/4 tsp ground nutmeg

1/4 cup freshly grated Parmesan cheese

 

1. Pre-heat the oven to 450 degrees.  Meanwhile, line a baking sheet with parchment paper.

2. Place the broccoli florets on the baking sheet.  Drizzle the olive oil over the broccoli, then sprinkle with the salt, pepper, and nutmeg.  Toss the ingredients to combine.

3. Roast the broccoli for 10 minutes.  Stir the florets, then roast for another 5 minutes.

4. Remove the roasted broccoli from the oven and immediately sprinkle with the shredded Parmesan cheese.  Serve warm.
