Lemon-Caper Compound Butter

The tartness of the lemon, the salty, briny-ness of the capers, and the freshness of the herbs, all mixed into the sweet, decadent butter create such an incredible burst of flavor.  Pair this compound butter with fish or grilled meat (especially chicken) to take your next meal over the top.

 

8 Tbsp (1 stick) unsalted butter, softened to room temperature

Zest of 1 lemon

1 1/2 Tbsp capers

1 Tbsp finely chopped fresh basil

1 Tbsp finely chopped fresh parsley

1/4 tsp salt

1/4 tsp freshly ground black pepper

 

Combine the ingredients in a small mixing bowl.  Using a fork, mash them together until thoroughly combined.  Use immediately, chill in the refrigerator for up to 1 week, or freeze for up to 3 months.

Makes about 3/4 cup
