Tropical Mimosas

This past week, I invited a couple of my “mommy” friends over so our kids could have a play date.  In reality, it was a play date for us as well.  We have been trying to get together for a girls’ night out, but our evening schedules haven’t aligned…this was the next best thing.

One pre-requisite I have when choosing “mom” friends is that they drink, or at least not mind if I do.  I don’t have room in my life for judgmental people, and honestly, sometimes my son inspires imbibing.  Happily, these women enjoy a good cocktail, too, so I decided it was the perfect opportunity to try an idea I had been contemplating: A tropical mimosa.

I first came up with it while dining at a local brunch place called Just a Pinch Cafe.  The menu boasts a Hawaiian and Southern Comfort fusion cuisine.  Every time we eat there, we come away stuffed—the calorie intake is astronomical, but totally worth it.  One of my favorite things to order is pineapple upside down pancakes served with a coconut syrup, which is the inspiration for this mimosa.  It consists of a splash of coconut rum, pineapple juice, orange juice, and Prosecco.

I am thrilled to report that my friends gave this island twist a very enthusiastic thumbs up.  I knew I liked them! 😉

 

Splash of Coconut Rum, such as Malibu

1/2 oz pineapple juice

1/2 oz orange juice

2 oz chilled Prosecco, or your favorite sparkling wine

Toasted coconut, finely chopped, optional

Pineapple chunk, for garnish, optional

Maraschino cherry, for garnish, optional

 

1. If you desire to rim the glass with toasted coconut, first, pour a little pineapple juice into a shallow bowl.  Dip the lip of the glass into the juice, then dip it into the chopped, shredded coconut to coat.  I suggest doing this in advance to allow the juice to dry and the coconut to set.

2. Pour a splash of coconut rum into the glass, followed by the pineapple juice and orange juice.  Top with the Prosecco.

3. If you are garnishing your drink, skewer a chunk of fresh pineapple and a maraschino cherry with a fancy toothpick.  Set the fruit skewer so that it rests on the lip of the glass.  Serve immediately.
