Paprika Dressing

If you ask kids what their favorite salad dressing happens to be, the popular answer is Ranch.  That wasn’t the case for me.  My favorite dressing growing up was hands down my mum’s Paprika Dressing.  As an adult, I still love it.  It’s vibrantly colored, flavorful, and so easy to make.  Not only is it delicious with fresh greens, sliced carrot rounds, and crumbled blue cheese, but it is a key ingredient in a killer marinated cucumber salad.

 

1/2 cup vegetable oil

1/2 cup apple cider vinegar

3 tsp paprika

2 tsp table salt, or to taste

 

Combine all the ingredients in a jar.   Screw the lid tightly onto the jar and shake vigorously to combine, until the salt is dissolved.

 

Makes about 1 cup
