Paprika Marinated Cucumber Salad

This is a super easy salad to make and is great alongside grilled meats, burgers, and sandwiches.

 

1 English cucumber, thinly sliced (1/16th of an inch on a mandolin is perfect)

1/4 red onion, thinly sliced (1/16th of an inch on a mandolin, just like the cucumber)

1 tsp kosher salt

1/3-1/2 cup Paprika Dressing

 

1. In a large bowl, toss the cucumber and red onion together with the kosher salt and allow the mixture to sit in the refrigerator for 30 minutes.

2. Drain the cucumber-onion mixture of any liquid that was released while resting in the refrigerator.  Pat the mixture dry with paper towels.

3.  Drizzle the mixture with the Paprika Dressing to taste.  I always start at the low-end and add more as needed.

4.  Allow the salad to rest in the refrigerator for at least 1 hour.  Serve chilled.
