My husband an I both love giardiniera. For a quick and easy salad, I love to mix it in with heartier greens, some freshly grated Parmesan, and a vibrant vinaigrette that compliments the pickled vegetables. This salad pairs nicely with Panini or pizza.
8 cups mixed greens, such as baby kale, romaine, and baby spinach
16 oz jar Giardiniera, drained
Freshly grated Parmesan cheese, to taste
Honey-Balsamic Vinaigrette, to taste
Combine the first three ingredients in a large bowl. Toss them together to distribute them. Pour the desired amount of vinaigrette over the ingredients and toss to coat. Serve immediately.
