Now that we’re parents, my husband and I don’t go out to celebrate Valentine’s Day. Instead, I prepare a fancy dinner at home, which always includes a specialty cocktail. This year, having a grapefruit on hand, I decided to make a drink featuring its tart juice. Thyme pairs well with citrus, so I infused simple syrup with the herb, then added it to the juice for a little sweetness. Finally, for the booze, I find that both vodka and gin work well with this combination.
4 oz freshly squeezed pink grapefruit juice
3 oz vodka or gin
2 oz Thyme Simple Syrup
Thyme sprigs, for garnish (optional)
Rosemary sprigs, for garnish (optional)
Combine the ingredients in a cocktail shaker or pint-sized mason jar. Fill the vessel with ice, then affix the lid and shake vigorously for about 15 seconds. Strain the mixture into chilled martini glasses or into rocks glasses filled with ice.
